Wake up and schmell the Schmacon.
There’s a new crispy meat strip debuting in the Chicago area and it’s called Schmacon, or smoked and cured glazed beef slices.
The Naperville-based product, made by Schmaltz Retail, is being hailed as "beef's answer to bacon."
The deli creation is expected to be unveiled at the National Restaurant Association Show at McCormick Place this weekend.
Schmacon is described as a smoked, cured, seasoned and crispy beef product.
According to the meat's inventor, Howard Bender, Schmacon can be used as a bacon alternative, and has less sodium, fat and calories than its pork counterpart.

“Schmacon’s flavor is its most satisfying feature, made with a proprietary spice blend and cure recipe inspired by its inventor’s deli roots,” according to a release from the company.
It’s not the first meaty creation to debut in Chicago, which is known for its love of hot dogs, sausages and beef.
Most recently, Mike Ditka debuted his own version of Vienna Beef sausages, named Ditka sausages.
