Province Restaurant Opens

With all of the new restaurants cropping up all over town, it's nice to have something that sets you apart.

Located in the environmentally friendly Chicago Transit Authority building, which was awarded Gold LEED-EB certification by the U.S. Green Building Council (USGBC), newcomer Province, 161 N. Jefferson St., is also environmentally friendly with its sustainably-harvested cork floor, cork and recycled wood table tops and chairs made from recycled materials.

Enough about the furniture – you're not going to eat that.

Randy Zweiban is executive chef and owner; you've seen his talents before at Nacional 27.  Not surprisingly, the American cuisine at Province is influenced by Central and South American and Spanish dishes.  The goal is to offer seasonal foods that are for the most part representative of sustainable, biodynamic, organic, and local ingredients.

Look for yummy small dishes like shrimp and organic grits with manchego cheese, or larger entrees such as the braised Heritage Farms lamb with chorizo and cornbread. There's also a ''bites'' portion of the menu for little tastes of items like Dungeness crab toast (pictured), and a selection of raw oysters, sashimi and ceviche.  There are 80-100 bottles on the wine list, which has a heavy South American/Spanish focus.
