Mama Fassett’s
Rock Your World Chili

Ingredients:
1 whole package of thick cut bacon
1 whole package of Italian sausage (you can use hot or mild)
1 whole package of ground beef (ground chuck is fine whatever you have --approx 1.5 lb)
1 whole package of ground veal (approx .5 lbs)
1 whole package of ground pork (approx .5 lbs)
3 oven roasted poblano peppers (peeled chopped)
2 oven roasted yellow peppers (peeled chopped)
3 jalapeño peppers
1 large red onion
2 Tbl chili powder
1 Tbl crushed red pepper
2 tsp kosher salt
1 tsp crushed black pepper
½ tsp oregano
1 C black beans
1 C dark red kidney beans
1 12oz can tomato paste
1 large can tomato sauce
2 ½ C water
Brown All The Meat
- cut bacon in cubes and brown until crispy…then remove and put in bowl to the side….leave fat in pan
- brown sausage remove and set aside
- brown beef remove set aside
- brown veal remove set aside
- brown pork remove set aside
Brown All Chopped Veggies and Spices
- brown diced onion, poblano and yellow peppers in remaining oils from browned meat(about 4 minutes) DO NOT CHOP AND ADD JALAPENO’S
- Add crushed red pepper, chili powder, salt, pepper, oregano (about 2 minutes)
Return Meat to Pot
Add Water, tomato paste, and WHOLE JALAPEÑO’S simmer uncovered for about 30 minutes….
****If you put the whole jalapeño pepper in the liquid and let it steep into the chili as a whole….it’s not as hot
Taste again to see if it needs more salt…usually it does
Remove jalapeño peppers…..chop and add to chili if you want a little extra heat
Serve in bowl with a little shredded cheese, a dollop of sour cream and large Frito chips arranged around the bowl to scoop!
