    Visit two regions of Spain in the upbeat atmosphere of Carnivale.

    Carnivale has taken us on quite the culinary adventure through Spainover the past few months. From Cataluyna and Valencia to Madrid and Castilla de la Mancha, we've gotten to try dishes reflective of various regions of this vibrant country. February marks the end of our journey, with a stop in Extremadura in the southwestern part of the country and Andalucia in the south central, areas known for rich Iberico ham and other meats, seafood and sherry.

    From Monday, Feb. 16 through Sunday, Feb. 22, Carnivale's executive chef Mark Mendez will add four special dishes to his menu, highlighting the culinary delights of Extremadura and Andalucia. For starters, try the "Pata Negra," Iberico ham with marinated olives and breadsticks ($15). Continue your meal with such dishes as "Caldereta de Cordero," braised lamb shoulder, parsnip puree and winter kale ($25); "Ajo Colorado," market fish in a garlic-and-tomato stew with olives ($28); and "La Serena," sheep's milk cheese with local honey and raisin bread ($6).

    And, what's a trip through Spain without Spanish wines? Both a red and white "Tour of Spain" wine flight featuring wines from Extremadura and Andalucia will be offered at Carnivale. Flights of three red wines is $12 and three white wines is $10.
