Bristol, Not to Be Confused with Palin

It's somewhat of an unusual (unfortunate?) coincidence that one of Chicago's hottest new restaurants shares its name with the 17-year-old pregnant daughter of the Republican vice-presidential candidate.  Well, at least you won't easily forget the name  Bristol any time soon. This contemporary American restaurant in the former Il Covo spot was due to open mid-September, but the torrential record setting downpour delayed the opening a week.  No matter – Ike's out. Bristol's in. Chef Chris Pandel, formerly of Tru and New York's Cafe Boulud, is one of three restaurant veterans behind the Midwestern/Mediterranean-inspired restaurant.  The menu is drool-worthy, including entrees like grilled flat iron steak and blue cheese ravioli and parmesan-crusted sausage and wilted spinach. And here's a unique tidbit that might appeal to some but alarm others: butchering of whole animals will be done in-house, and everything from the ketchup to cheese will be made from scratch.  Bristol is located at 2152 N.
