Lamb Meatball
1 lb. ground lamb
3 cloves of garlic
½ white onion
2 Tbsp. minced ginger

Mix all ingredients in a giant bowl and let marinate for an hour.

Mold into small ball shapes.

Pan sear it until it's golden brown on both sides then we bake it in the oven for about 10 minutes. Baking it in the oven is optional. You can always just pan sear it until it is fully cooked through. 

Tatziki (White Sauce)
175 grams of small diced cucumber
50 grams of small diced white onions
8 grams of salt
40 grams of sugar
5 grams of cilantro
50 grams of lime juice

After chopping all ingredients, mix together in a stainless steel bowl. 

Harrisa Sauce
4 Tbsp. paprika                   
2 Tbsp. garlic
1 pint container of chipotle puree
8 grams of salt
8 grams of sugar
1 cup grapeseed oil

Cook the paprika and garlic in a pan with the grapeseed oil until garlic sweats. After they are done, turn off the heat and mix in the chipotle puree with the sugar and salt. Then mix in a blender.
