New Dining Trend Hits Chicago

Chefs take over already-established locales, practice their craft

On any given day, Sarkis in Evanston serves up world-famous omelets. But on this night, something very different is popping up.

Chicago Chef Phillip Foss is taking over the kitchen, serving his own menu of delectible meatball sandwiches. He doesn't have his own restaurant yet so he is practicing his cuisine at Sarkis.

First seen in New York and San Francisco, Chicago is now part of this dining trend where chefs takeover already-established locales.

He gets the word out to hungry customers via Facebook, Twitter and old-fashioned e-mails.  And as quickly as he pops up, however, he pops out .
