Pops for Champagne revamps basement lounge

Chicago nightspots have proved that there's a certain allure to heading downstairs for your partying pleasure. Just visit The Underground, SUB51 or Curio if you're looking for proof.

Now a downtown late-night staple is offering its new twist in basement lounging. Pops for Champagne has revamped its popular downstairslounge and is relaunched it as "WaterShed," described as a parlour room "dedicated to the best beers, spirits and wines that the Great Lakes region has to offer."

More than 40 craft beers, 25 artisanal spirits, 12 still wines and four sparkling wines, all produced in the 8 state Great Lakes region, are available at the new spot, including a $10 cocktail list created by Daniel de Oliveira, Mercadito and Boka's former mixologist.

A special menu is available at WaterShed, including small bites like Duck Fat Confit Yukon Gold Marble Potatoes and bigger plates such as Fried Honey-Brined Cornish Game Hen with a roasted jalapeno & smoked cheddar corn bread pudding.

The subterranean space will also continue its live music tradition. Starting Sept. 30, The Northside Southpaws will play live on Thursday nights from 10 p.m. - 12:30 a.m.

WaterShed's offical grand opening is Thursday night, but the space has been in soft-opening mode for the past week.
