America’s Dog’s Manolis Alpogianis shares his classic Chicago Hot Dog ingredients plus recipes for specialty and celebrity dogs.

Everyone has a definitive recipe for the classic Chicago Hot Dog.  Quite often, though, no two are exactly alike.  But, one thing that is pretty consistent among them all is no ketchup!  This week I was fortunate to have America’s Dog’s Manolis Alpogianis join me and share his take on the classic Chicago Hot Dog as well as create few custom dogs that are currently being featured in his restaurants.  We also had fun creating a brand new dog honoring the giant sized Marilyn Monroe sculpture on the NBC Chicago plaza.   We found evidence that Marilyn Monroe did, in fact, like hot dogs and we made our version with a little kick for the “Some Like It Hot” icon.

The Chicago Hot Dog

The Chicago Dog starts with a Vienna Pure Beef Hot Dog in a steamed poppy seed and then add what Manolis calls 'The Chicago Seven' - mustard, relish, diced onion, tomato, sport peppers, pickle and celery salt

Chef Art Smith's Marathon Dog

Art’s hot dog starts with a low fat, low sodium andouille chicken dog in a toasted whole wheat bun topped with broccoli slaw.

The Broccoli Slaw Recipe

Ingredients

1 bag of Broccoli slaw mix
1/2 head of red cabbage chopped
1/4 cup of rice wine vinegar
1/4 cup of  red wine vinegar
a little less than 1/4 cup olive oil to help balance out the vinegar
2 1/2 Tbs of agave nectar
4 cloves of garlic chopped finely
1 teaspoon of sesame seeds
1/2 tsp of salt
1/2 tsp of Pepper

Method

Mix Broccoli slaw mix and chopped cabbage together in a bowl.  Mix the rest of the ingredients together in a separate bowl.  Then combine the two together mix well!!
Set in cooler to cool!!

The Kenwood Dog

This dog is made with an apple and gouda chicken dog placed in a toasted whole wheat bun topped with a crispy apple slaw in a honey mustard slaw.

Crispy Apple Slaw Recipe

Ingredients

2 Tbsp of Low Fat plain yogurt
1 Tbsp of Grainy Dijon Mustard
1/2 tsp of Salt
1 1/2 tsp of Honey
1 Tbsp of Apple Cider Vinegar
1/2 tsp of Poppy Seeds
1 large Carrot cut Julienne or 1 cup Matchstick- cut carrots
1-2 stalks celery, cut julienne
1 Granny Smith apple, cut into Matchstick

Method

Whisk together the yogurt, mustard, salt, honey, cider and poppy seeds.  Mix the carrots and apples and celery together in a large bowl pour half of the dressing over them and toss.  Keep adding dressing until you get the desired flavor!!

All beef hot dog with yellow mustard, Ketchupeno (a gourmet spicy ketchup), grilled onions and yellow peppers.
