Hummingbird Kitchen, the area's first food truck authorized for on-board cooking, hit the mean streets of Evanston this week. Serving up a small seasonal lunch menu of coffee, soup, tacos, salads, and sandwiches, chef Vincent DiBattista says the mobile kitchen isn't so different from his brick-and-mortar spot at Evanston's Campagnola. "We're stll trying to figure out the lay-out," DiBattista says. "We're still bumping into each other, but that would be the same in a regular kitchen." The Tweeting truck has found a solid reception from both Northwestern students and Evanston residents. "Yesterday was our first day and we nearly ran out of food," says DiBattista. "We barely made it to 1:30, but that's a good thing. The goal is to sell everything we've made on the truck." [The Feast]
