Rustic Tuscan Tomato Soup: from Jolanes Cafe and Wine Bar


1 can tomatoes, crush by hand
1/2 cup whole garlic
1 cup extra virgin olive oil
3/4 onion, 1/2 dice
1/8 cup dried oregano
1/4 quart red wine
1/2 quart whole milk, added at end
 

1. Add olive oil in a large sauce pan.  Add the garlic and cook until browned.  Add the onions and saut√© until translucent.
 
2.  Add the red wine and reduce (evaporate the liquid by boiling) by 80%.  Now add the tomatoes that have been crushed by hand.

3.  Cook the soup until it reduces again by about 30%.  Add the oregano and milk - do not continue to cook. Season with sea salt and pepper to taste.
