City Provisions Taps Exclusive Brew

As chef-brewer collaboration beers pop up at restaurants from Publican to Three Aces to Girl & The Goat, it takes some effort to stand out from the pack. That explains why City Provisions' Cleetus Friedman has been busy hopping from brewery to brewery creating beers for a monthly series of collaborations on tap now at the deli.

First up is Kirsch von Blücher, a cherry Dunkelweiss brewed with Flossmoor that debuted last week at the deli. The easy-drinking, summer-appropriate beer is brewed with 100 pounds of Seedling Farms cherries, though you won't taste a huge wallop of fruit in the well-balanced beer. "I come up with an idea of what I want to brew in terms of style and tasting notes, and take it to the brewer," says Friedman. "At that point there is a back and forth dialogue about what could actually work in the brewing process." Oh, and curious about that umlaut-ed name? Just go rent Young Frankenstein.

Next on deck is Carburetor Rye #58, a Dunkel Doppelbock aged in Templeton Rye barrels that is a partnership with Metropolitan, debuting sometime in September. Through the fall, a new beer will hit the deli each month, including a honey wheat beer with Finch, a sarsparilla stout with Dark Horse, and a Belgian strong ale with Pipeworks. Pints will range from $6-$8, but you'll have to drink them on the spot, as bottling or to-go growlers aren't allowed. Your best bet is to pull up a chair on the front patio and order the summer beers while the weather's still cooperative. [The Feast]
