Bite Me: Short Rib Poutine

Traditional French dish gets gourmet touch

Like a doting momma, NBCChicago.com just wants to feed you. Bite Me is our twice-weekly look at the most succulent dishes Chicago has to offer. Read on, eat well.

In some parts of the world -- particularly where they speak French -- poutine is considered a delicacy. In the United States, not so much. In it's rawest form, poutine is cheese curds and gravy served on fries, and if you happen to be visiting our neighbors to the north, don't be surprised to see it on the menu at a fast food hamburger joint. So what's poutine doing at a fancy joint like ajasteak in downtown Chicago? Chance are, you've never had poutine like this.

What's in it?
Steak fries topped with short ribs that have been braised for several hours in carrots, onions and celery. It's topped with aged cheddar cheese and parsley and served with a red wine jus.

Suggested pairing:
Any beer will do, but a Belgian ale is better.

The Chef says:
"I first picked up on the wonders of poutine when I attended cooking school in Montreal. This is my gourmet version." -- Joshua Linton

How much is it?
$12 on the bar menu.
