A Lesson in Balsamico at Spiaggia

Spiaggia balsamico producer, Andrea Bezzecchi from Acetaia San Giacomo, will be in town this Thursday for a special seven-course dinner and to speak to guests about his acetaia (where balsamico is made and aged). The official producer Spiaggia's branded balsamico since April 2010, Bezzecchi will share his extensive knowledge of baslamico, including the differences between the store-bought product and aged bottles (and with a charming Italian accent!).

The dinner will include dishes from Executive Chef Sarah Grueneberg paired with balsamico hand-poured by Bezzecchi, such as braised pork filled ravioli, crispy dewlap and caramelized onions with an Agro di Mosto aged eight years in oak and chestnut barrels, and creamy Acquellero risotto with Parmigiano Reggiano with 12-year balsamico aged in a variety of nine wooden barrels.

The menu will be available during dinner at Spiaggia starting on Thursday, July 1 and runs a bit steep at $160 per person (plus $90 per person for wine pairings).
