Dishing With Chicago Chefs: Food Network's Jeff Mauro Talks BBQ Secrets

In this segment of "Dishing With Chicago Chefs," Food Network star Jeff Mauro, known as the "Sandwich King," shows us some of his best BBQ secrets. 

GRILLED SKIRT STEAK with ROASTED “SMASHED” POTATOES and ASPARAGUS

SKIRT STEAK:

2# skirt steak
Kosher salt
Ground black pepper
11/2 c pnm sweet heat

Salt and pepper steak and place in bag with Pork & Mindy’s Sweet Heat sauce, Marinate for 1 hour to overnight. Remove and grill on med/high heat 2-3 min per side, remove from grill and let rest for 3 min. Slice and place on plate.

POTATOES:

6 red A potatoes
Kosher salt
Olive oil
1/2 c grated parmesan cheese
1/2 c sour cream
1/4 c ranch
1/4 c mustard sauce
Chopped chives

Cook potatoes in salted water til fork tender, remove from water and smash with spatula, oil baking sheet and place potatoes on sheet, top with parmesan cheese and drizzle with olive oil, bake 15-20 min at 450 til golden and crispy, remove from oven and drizzle with mustard cream and top with chives


ROASTED ASPARAGUS:
1# asparagus
Olive oil
Kosher salt
Ground black pepper
1/4 c chopped corn nuts

Place asparagus on sheet pan drizzle with oil and sprinkle with salt and pepper, toss to coat, place in 450 oven for 15-20 min until tender but crisp. Remove, place on plate, drizzle with sweet sauce and top with corn nuts
