    Chef Katsuji Tanabe shares with Cafe 5 his roasted chili mango salsa recipe and discusses which city he loves best for food.

    Chef Katsuji Tanabe makes Chicago his part-time home after opening the popular restaurant Barrio in the city.

    This weekend, Tanabe is in the city to team up with another TV alum to cook for charity. 

    On Sunday, he'll take the stage with fellow "Top Chef" rival John Tesar for a cooking demonstration series to benefit the Facial Pain Research Foundation.

    Ingredients

    2 cups of fresh or frozen mango chunks

    In this segment of Cafe 5, Chef Joe Flamm, executive chef of Spiaggia and Café Spiaggia and the reigning "Top Chef" champion, shared his recipe for Tonno Vitelatto, the dish he prepared in the final episode of the hit cooking show that earned him the winning title.

    1/4 cup of peeled garlic

    1/2 cup of dry Chipotle

    3 large Roma tomatoes

    1 cup of apple cider vinegar

    2 tbsp of kosher salt

    1 large white onion 

    Method

    Preheat the oven to 350-degrees

    Roast the onion,mango,garlic and tomatoes until almost charred/close to be burnt (yes burnt is good) in the oven

    Then transfer everything to a pot and cook for 25-minutes at medium flame

    Then blend and add salt to liking

    To keep chilled, keep the salsa in the fridge. It will last around 15 days.
