Two veterans of the world famous Alinea restaurant in Chicago will soon debut a new kind of culinary concept in the city – a culinary brewhouse.
Band of Bohemia, started by partners Craig Sindelar and Michael Carroll, two Alinea alums, aims to be a beer-centric eating experience where beer, brewed at the restaurant, dictates your food order, according to Eater.
With brews like a lemon, lavender and cardamom wheat, or even a roasted beet and thyme rye, the concept is one that will definitely bring a new flavor to the city’s Ravenswood neighborhood. Each beer would reportedly be listed on the menu with three to five food items that would fit well with the drink.
Eater reports that the pair met nine years ago working at Chicago’s now-famous Alinea restaurant, with Carroll working as a baker and Sindelar working as head sommelier.
Carroll has also previously worked at the popular Halfacre Brewing Co.
Eater reports that the new restaurant, which will be located at 4710 N. Ravenswood Ave. near the Lawrence Avenue Metra station, aims for a fall opening.
While the concept is being hailed as innovative, similar restaurant breweries are popping up in the city, including one by Rick Bayless called Cruz Blanca, set to open on Randolph Street in Chicago this fall and an unnamed Owen & Engine project that aims to combine a brewery with Southeast Asian cuisine.
