Moshpix: Need more proof that the pig is as popular as ever? Pork aficiandos took over the Four Seasons Hotel Chicago to watch five chefs prepare a nose-to-tail menu using heritage breed pigs. The chefs included Carlos Gaytan of Mexique, Danny Grant of RIA and Balsan, Stephanie Izard of Girl and the Goat and Mike Sheerin of Three Floyds, but the big winner was Jason Vincent of Nightwood. Cochon 555 is a national event series that serves to bring attention to heritage breed pigs, which are typically raised on smaller family-run farms.
