Japonais offers an extensive mix of contemporary and traditional Japanese food and is a favorite of celebs visiting town. The extensive dinner menu allows you to sample a variety of delectable items, but when we asked executive chef Jan Ichikawa to choose just one to highlight, he pointed us in the direction of this appetizer.

What's in it?
Hamachi, yuzu, soy sauce, spicy tobiko, tempura shallots, chives and ginger with hot oil drizzled on top.
