NBC Chicago Fitness Club coach Saran Dunmore is whipping teens into shape on MTV's new show, "I Used to Be Fat."
Dominick Ruane changed his attitude tward food and exercise, and now he's writing an e-cookbook full of healthy recipes and going to culinary school! Here's one of Dominick's favorite recipes:
Roasted Red Pepper Chicken Pesto:
1 skinless boneless chicken breast
1 red bell pepper, roasted and mashed
2T dried basil
3T olive oil
2t garlic powder
Sprinkle of parmesan cheese
1 whole wheat tortilla wrap
Grill or bake chicken breast until cooked through. Let stand for 5 minutes. While chicken is cooling combine basil, oil, Garlic, salt and parmesan cheese in a bowl. Remove skin from roasted red pepper, remove the stem and seeds, mash pepper, and mix into pesto. Dice chicken breast and mix with pesto. Put chicken in wrap and combine with some tomato and romaine lettuce.
